I spend a lot of time in the kitchen with my Mom --- cutting fat off chicken, measuring things, chopping vegetables, stirring things on the stove, and checking things in the oven.
Growing up in Wisconsin, there was a lot of cheese. A lot of bread. A lot of "casseroles" that had cheese and bread. And sausage. And butter. So much butter. It was awesome.
But now that I'm in more control over what I eat, I love to experiment with lower-calorie, smaller portioned, and higher-nutrition dishes. A lot of what I post on this blog is Paleo, which I feel is a great diet to try.
Trying different diets forces you to pay attention to where your food is coming from and what's in it. It gives you an opportunity to be creative in the kitchen and try things you may not have tried otherwise.
For example: I ADORE homemade almond milk. It's perfect. If you make it from home, it tastes just like Vitamin D (whole) milk. But with a fraction of the calories and fat. I never would have tried it otherwise!
Don't get me wrong. There will be cheese. And yeah, alcohol isn't paleo. Neither is coffee. But Imma still imbibe. Life is short, you know? WAY too short not to eat cheese and bread. And everything in moderation . . . including moderation ;-)
